Description

A deliciously savory stuffed pork loin roll filled with crispy bacon, sweet apples, tart cranberries, and vibrant spinach, perfect for family gatherings or special occasions.


Ingredients

  • 4 pounds center cut pork loin
  • 5 slices diced smoked bacon
  • 1 diced shallot
  • 3 cloves minced garlic
  • 4 cups fresh baby spinach
  • 1 small peeled and diced apple
  • 1/2 cup chopped dried cranberries
  • 2 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 2 tablespoons butter

Instructions

  1. Sauté the diced bacon in a skillet over medium heat until crispy. Remove and set aside.
  2. Add diced shallot and minced garlic to the same skillet and cook until fragrant.
  3. Mix in fresh spinach until wilted, then add apple, cranberries, and bacon. Pour in maple syrup, seasoning with salt, pepper, and smoked paprika.
  4. Cut the pork loin lengthwise, making sure not to cut all the way through, then open it like a book.
  5. Season the inside of the pork loin generously with salt, pepper, and herbs.
  6. Spread the prepared filling evenly over one side of the butterflied pork loin.
  7. Roll the pork loin back up into its original shape and secure it with kitchen twine.
  8. Preheat your oven to 375°F (190°C).
  9. Sear the pork loin on all sides in a hot skillet with butter until golden brown.
  10. Transfer to a roasting pan, surround with whole garlic cloves, rosemary, and thyme.
  11. Pour chicken broth into the pan to keep moist as it roasts.
  12. Roast for 50–60 minutes, or until a meat thermometer registers at least 145°F (63°C). Rest before slicing.
  13. Strain the pan drippings after removing the pork loin to eliminate solids.
  14. Combine melted butter and flour in a saucepan to form a roux, gradually whisk in the strained drippings and broth, simmering until thickened.

Notes

Prepare the filling a day beforehand to save time. Experiment with different seasonal fruits or nuts for added flavor and texture.
