Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 cups apple cider
  • 1 cup chicken broth
  • 2 medium apples, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until softened.
  3. Add the minced garlic and cook for another minute.
  4. Season the chicken thighs with salt and pepper, then add them to the pot.
  5. Pour in the apple cider and chicken broth, and bring to a simmer.
  6. Add the diced apples, thyme, and rosemary.
  7. Cover and let it cook for about 30-40 minutes, or until the chicken is cooked through.
  8. Remove the chicken, shred it, and return it to the pot.
  9. Adjust seasoning if necessary and serve hot.

  • For a thicker stew, you can add a cornstarch slurry.
