Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 2 cups apple cider
- 1 cup chicken broth
- 2 medium apples, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery, and sauté until softened.
- Add the minced garlic and cook for another minute.
- Season the chicken thighs with salt and pepper, then add them to the pot.
- Pour in the apple cider and chicken broth, and bring to a simmer.
- Add the diced apples, thyme, and rosemary.
- Cover and let it cook for about 30-40 minutes, or until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Adjust seasoning if necessary and serve hot.
Notes
- For a thicker stew, you can add a cornstarch slurry.
- Serve with crusty bread for a complete meal.
- This stew can be made in advance and reheated.
