- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons melted butter
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 apples, peeled and diced
- 1 teaspoon cinnamon
- 2 tablespoons brown sugar
- Butter for cooking
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, vanilla extract, and salt until smooth.
- In a separate bowl, combine diced apples, cinnamon, and brown sugar.
- Heat a non-stick skillet over medium heat and add a little butter.
- Pour a ladle of crepe batter into the skillet, swirling to coat the bottom evenly.
- Cook for about 1-2 minutes until the edges lift, then flip and cook for another minute.
- Remove the crepe and fill it with the apple mixture, then fold or roll it up.
- Repeat with the remaining batter and filling.
- Serve warm, optionally with whipped cream or syrup.
Notes
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
- Adjust the sweetness by adding more or less sugar to the apple filling.
- These crepes can be made ahead and reheated in a skillet.
