- 1 cup Greek yogurt
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup diced apples
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the diced apples and walnuts (if using).
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a sweeter muffin, increase the amount of honey or maple syrup.
- These muffins can be stored in an airtight container for up to 3 days.
- Feel free to substitute the apples with other fruits like pears or berries.
