Description

These Apple Cinnamon Greek Yogurt Muffins are a delightful and healthy twist on traditional muffins, combining the flavors of fresh apples and warm cinnamon with the creaminess of Greek yogurt.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the Greek yogurt, honey (or maple syrup), eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the diced apples and walnuts (if using).
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a sweeter muffin, increase the amount of honey or maple syrup.
  • These muffins can be stored in an airtight container for up to 3 days.
  • Feel free to substitute the apples with other fruits like pears or berries.
