Ingredients

  • 4 medium sweet potatoes
  • 2 apples, peeled and diced
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup chopped pecans
  • 1/4 cup raisins
  • 2 tablespoons butter
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. In a skillet, melt the butter over medium heat and add the diced apples, brown sugar, cinnamon, and nutmeg.
  4. Cook the apple mixture for about 5-7 minutes until the apples are soft.
  5. Remove the sweet potatoes from the oven and let them cool slightly.
  6. Slice the sweet potatoes open and fluff the insides with a fork.
  7. Stuff the sweet potatoes with the spiced apple mixture, then top with chopped pecans and raisins.
  8. Return to the oven for an additional 10 minutes to warm through.
