- 4 medium sweet potatoes
- 2 apples, peeled and diced
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup chopped pecans
- 1/4 cup raisins
- 2 tablespoons butter
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- In a skillet, melt the butter over medium heat and add the diced apples, brown sugar, cinnamon, and nutmeg.
- Cook the apple mixture for about 5-7 minutes until the apples are soft.
- Remove the sweet potatoes from the oven and let them cool slightly.
- Slice the sweet potatoes open and fluff the insides with a fork.
- Stuff the sweet potatoes with the spiced apple mixture, then top with chopped pecans and raisins.
- Return to the oven for an additional 10 minutes to warm through.
- Serve warm and enjoy!
Notes
- For a vegan option, substitute butter with coconut oil.
- Feel free to add other nuts or dried fruits as desired.
