Description

A refreshing cucumber salad with a spicy dressing, perfect for summer picnics and potlucks.


Ingredients

  • 4 firm cucumbers, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 teaspoon chili flakes (adjust to taste)
  • 2 tablespoons sesame seeds
  • 2 green onions, chopped

Instructions

  1. Prepare the cucumbers: Wash and slice them thinly, about 1/4 inch thick.
  2. Make the dressing: In a small bowl, combine rice vinegar, soy sauce, sesame oil, and chili flakes. Whisk until well blended.
  3. Add the onions and seeds: Toss sliced green onions and sesame seeds into the dressing.
  4. Combine and toss: Place cucumber slices in a large mixing bowl, pour the dressing over, and gently toss.
  5. Chill and serve: Let the salad sit for 10-15 minutes, then serve chilled or at room temperature.
