Ingredients

- 4 firm cucumbers, thinly sliced
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 teaspoon chili flakes (adjust to taste)
- 2 tablespoons sesame seeds
- 2 green onions, chopped
Instructions
- Prepare the cucumbers: Wash and slice them thinly, about 1/4 inch thick.
- Make the dressing: In a small bowl, combine rice vinegar, soy sauce, sesame oil, and chili flakes. Whisk until well blended.
- Add the onions and seeds: Toss sliced green onions and sesame seeds into the dressing.
- Combine and toss: Place cucumber slices in a large mixing bowl, pour the dressing over, and gently toss.
- Chill and serve: Let the salad sit for 10-15 minutes, then serve chilled or at room temperature.
Notes
Best served cold; can be made a day in advance for deeper flavor.
