- 2 lbs beef chuck roast
- 1 lb beef shank
- 3 guajillo peppers
- 2 ancho peppers
- 1 chipotle pepper in adobo
- 4 cloves garlic
- 1 onion, quartered
- 2 tsp ground cumin
- 1 tsp dried oregano
- 4 cups beef broth
- Salt to taste
- Corn tortillas
- Cheese (Oaxaca or mozzarella)
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Prepare the consomé by soaking the guajillo and ancho peppers in hot water for 15-20 minutes. Drain and blend with the chipotle, garlic, onion, cumin, oregano, and 1 cup of beef broth.
- Simmer the beef chuck roast and shank with the blended pepper mixture, remaining beef broth, and salt in a large pot. Bring to a simmer, cover, and cook for about 3 hours.
- Shred the beef once fork-tender and set aside.
- Heat a skillet and lightly dip a tortilla into the consomé. Warm the tortilla in the skillet for a minute.
- Fill the tortilla with shredded beef and cheese, fold, and cook until crispy and golden.
- Serve with a bowl of consomé for dipping and garnish with cilantro and lime wedges.
Notes
Add additional toppings like diced onions, radishes, or sour cream for extra flavor.
