- 1/2 cup cooked bacon, chopped
- 1/2 cup jalapeños, chopped (remove seeds for less heat)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 package egg roll wrappers
- Oil for frying
- Salt and pepper to taste
Instructions
- In a medium mixing bowl, combine the softened cream cheese, chopped bacon, jalapeños, shredded cheese, salt, and pepper. Mix thoroughly.
- Lay an egg roll wrapper on a flat surface. Spoon a generous amount of filling onto the center.
- Fold the wrapper snugly around the filling, sealing the edges with a little water.
- Heat oil in a deep pan over medium-high heat.
- Fry the eggrolls in batches for 3-4 minutes per side, until golden brown.
- Drain on paper towels over a cooling rack.
Notes
You can customize the filling by adding extras like corn or black beans. These eggrolls can be frozen before frying and prepared directly from the freezer.
