Description

Crispy eggrolls filled with creamy cheese, smoky bacon, and spicy jalapeños, perfect for any gathering.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup jalapeños, chopped (remove seeds for less heat)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 package egg roll wrappers
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. In a medium mixing bowl, combine the softened cream cheese, chopped bacon, jalapeños, shredded cheese, salt, and pepper. Mix thoroughly.
  2. Lay an egg roll wrapper on a flat surface. Spoon a generous amount of filling onto the center.
  3. Fold the wrapper snugly around the filling, sealing the edges with a little water.
  4. Heat oil in a deep pan over medium-high heat.
  5. Fry the eggrolls in batches for 3-4 minutes per side, until golden brown.
  6. Drain on paper towels over a cooling rack.

Notes

You can customize the filling by adding extras like corn or black beans. These eggrolls can be frozen before frying and prepared directly from the freezer.
