Description

Delicious baked potatoes stuffed with tender pulled pork mixed with ranch seasoning, perfect for a hearty meal.


Ingredients

  • 4 large russet potatoes
  • 2 cups pulled pork
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then poke holes in them with a fork.
  3. Bake the potatoes for about 45-60 minutes, or until tender.
  4. In a bowl, mix the pulled pork with the ranch seasoning.
  5. Once the potatoes are done, let them cool slightly, then cut them in half and scoop out some of the flesh.
  6. Mix the scooped potato flesh with the pulled pork mixture, cheddar cheese, sour cream, and green onions.
  7. Stuff the potato skins with the mixture and top with additional cheese if desired.
  8. Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes until heated through and cheese is melted.

Notes

  • For a spicier kick, add jalapeños to the filling.
  • These can be made ahead of time and reheated before serving.
