Delicious baked potatoes stuffed with tender pulled pork mixed with ranch seasoning, perfect for a hearty meal.
Ingredients

- 4 large russet potatoes
- 2 cups pulled pork
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then poke holes in them with a fork.
- Bake the potatoes for about 45-60 minutes, or until tender.
- In a bowl, mix the pulled pork with the ranch seasoning.
- Once the potatoes are done, let them cool slightly, then cut them in half and scoop out some of the flesh.
- Mix the scooped potato flesh with the pulled pork mixture, cheddar cheese, sour cream, and green onions.
- Stuff the potato skins with the mixture and top with additional cheese if desired.
- Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes until heated through and cheese is melted.
Notes
- For a spicier kick, add jalapeños to the filling.
- These can be made ahead of time and reheated before serving.
- Feel free to substitute the pulled pork with chicken or beef.
