Description

These Baked Beef Taquitos are a delicious blend of seasoned ground beef, cheese, and vegetables wrapped in crispy tortillas, perfect for any gathering.


Ingredients

  • 1 lb ground beef
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 12 small corn tortillas
  • Cooking spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Add ground beef, onion, and bell pepper to a non-stick skillet over medium heat and sauté for 5-7 minutes.
  3. Stir in garlic powder, cumin, salt, and pepper. Cook for 1-2 minutes.
  4. Remove from heat and mix in shredded cheese until melted.
  5. Warm corn tortillas in the microwave for about 30 seconds.
  6. Spoon the beef mixture onto the center of a tortilla and roll tightly.
  7. Place the rolled taquitos on a baking sheet and lightly spray with cooking spray.
  8. Bake for 15-20 minutes or until golden and crispy, flipping halfway through.
  9. Serve warm with your favorite dipping sauces.

Notes
