Ingredients

  • 4 chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add mushrooms and cook until softened.
  4. In a baking dish, combine rice, chicken broth, thyme, salt, and pepper.
  5. Place chicken thighs on top of the rice mixture.
  6. Spread the sautéed mushroom mixture over the chicken.
  7. Cover the dish with foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through.
