- 1 package (14.1 oz) frozen puff pastry sheets
- 1 beaten egg (for egg wash)
- Everything bagel seasoning (optional)
- 1 tbsp olive oil
- 1 finely chopped shallot
- 2 minced garlic cloves
- 10 oz fresh spinach
- 4 oz softened cream cheese
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan
- 1/4 tsp nutmeg
- 4 large eggs
- Salt and freshly ground black pepper to taste
- Chopped fresh chives (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and grease four 4-inch ramekins.
- Thaw the puff pastry according to the package instructions and roll it out gently.
- Cut circles that will fit into your ramekins and place them inside.
- Blind bake the pastry for 12-15 minutes until golden.
- Heat a small sauté pan over medium heat, add olive oil, and sauté shallot and garlic until fragrant.
- Add the spinach and cook until wilted.
- Stir in cream cheese, heavy cream, Parmesan, nutmeg, salt, and pepper until blended.
- Divide the mixture into the baked tart shells and crack an egg on top of each.
- Brush the edges with the beaten egg and sprinkle everything bagel seasoning if desired.
- Bake again for 12-18 minutes until egg whites are set but yolks remain soft.
- Garnish with fresh chives and serve warm.
Notes
Customize by swapping spinach for other greens or trying different cheeses. Can be made ahead by preparing filling a day prior.
