A delicious and flavorful panini made with grilled chicken, fresh mozzarella, spinach, and a tangy balsamic glaze.

- 2 boneless, skinless chicken breasts
- 4 slices of fresh mozzarella cheese
- 2 cups fresh spinach
- 4 ciabatta rolls
- 1/4 cup balsamic glaze
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat a grill or grill pan over medium heat.
- Season the chicken breasts with olive oil, salt, and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
- Remove the chicken from the grill and let it rest for a few minutes before slicing.
- Slice the ciabatta rolls in half and layer the bottom half with spinach, sliced chicken, and mozzarella cheese.
- Drizzle balsamic glaze over the mozzarella.
- Top with the other half of the ciabatta roll.
- Grill the assembled panini for 3-4 minutes on each side, or until the bread is golden and the cheese is melted.
- Slice in half and serve warm.
Notes
- For extra flavor, marinate the chicken in balsamic vinegar for 30 minutes before grilling.
- Feel free to add other vegetables like roasted red peppers or tomatoes.
- Serve with a side salad for a complete meal.
