Description

A delicious and flavorful panini made with grilled chicken, fresh mozzarella, spinach, and a tangy balsamic glaze.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 slices of fresh mozzarella cheese
  • 2 cups fresh spinach
  • 4 ciabatta rolls
  • 1/4 cup balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. Season the chicken breasts with olive oil, salt, and pepper.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  5. Slice the ciabatta rolls in half and layer the bottom half with spinach, sliced chicken, and mozzarella cheese.
  6. Drizzle balsamic glaze over the mozzarella.
  7. Top with the other half of the ciabatta roll.
  8. Grill the assembled panini for 3-4 minutes on each side, or until the bread is golden and the cheese is melted.
  9. Slice in half and serve warm.

  • For extra flavor, marinate the chicken in balsamic vinegar for 30 minutes before grilling.
