- 1/2 cup balsamic vinegar

- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons butter
- 2 tablespoons fresh parsley, chopped
Instructions
- In a bowl, mix balsamic vinegar, olive oil, garlic, oregano, basil, salt, and pepper.
- Add chicken breasts to the marinade and let sit for at least 30 minutes.
- While the chicken is marinating, boil the potatoes in salted water until tender.
- Drain the potatoes and mash them with milk, butter, and parsley until smooth.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
- Serve the grilled chicken with herbed mashed potatoes on the side.

- For extra flavor, let the chicken marinate overnight.
