- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled goat cheese
- 1/2 cup walnuts, chopped
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the cubed butternut squash with olive oil, balsamic vinegar, salt, and pepper.
- Spread the squash evenly on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until tender and caramelized.
- Remove from the oven and let cool slightly.
- Transfer the roasted squash to a serving dish and top with crumbled goat cheese and chopped walnuts.
- Garnish with fresh parsley if desired and serve warm.
Notes
- For a sweeter flavor, add a drizzle of honey before serving.
