Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar

  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled goat cheese
  • 1/2 cup walnuts, chopped
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cubed butternut squash with olive oil, balsamic vinegar, salt, and pepper.
  3. Spread the squash evenly on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized.
