Instructions
- Preheat the oven to 350°F (175°C) and grease a baking sheet.
- In a bowl, mash the ripe bananas and set aside.
- In another bowl, mix flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream together the sugar and butter until light and fluffy.
- Add the eggs, vanilla extract, and mashed bananas to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Spread the batter evenly onto the prepared baking sheet.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Once baked, let it cool for a few minutes, then roll it up in a clean kitchen towel and let it cool completely.
- For the filling, beat the cream cheese, powdered sugar, and lemon juice until smooth.
- Unroll the cooled cake, spread the cream cheese filling evenly, and roll it back up.
- Chill in the refrigerator for at least 1 hour before slicing and serving.
