Description

A comforting and exciting blend of creamy mac and cheese, tender shredded chicken, and sweet smoky BBQ sauce.


Ingredients

  • 1 lb (450g) chicken breast, cooked and shredded
  • 1 tablespoon olive oil
  • 8 oz (225g) elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup milk
  • ½ cup BBQ sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Cook the Pasta: Boil a large pot of salted water. Add the elbow macaroni and cook according to package instructions until al dente. Drain the pasta and set it aside.
  2. Warm the Chicken: In a large skillet, heat the olive oil over medium heat. Add the shredded chicken and cook for 2-3 minutes until warmed through and fragrant.
  3. Mix in the Barbecue: Stir in the BBQ sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to coat the chicken thoroughly in the flavorful sauce.
  4. Prepare the Cheese Sauce: In a separate saucepan, heat the milk over medium heat. Gradually stir in the cheddar and mozzarella cheese, mixing continuously until melted and smooth.
  5. Combine It All: Add the cooked pasta to the cheese sauce, stirring to combine. Then, fold in the BBQ chicken mixture.
  6. Taste and Adjust: Sample the dish and adjust seasoning with additional salt and pepper if necessary.
