- 2 medium sweet potatoes
- 2 cups cooked chicken, shredded
- 1/2 cup BBQ sauce
- 1 cup black beans
- 1 cup corn, canned or frozen
- 1 avocado, sliced

- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the sweet potatoes by washing and piercing them with a fork.
- Bake the sweet potatoes for 45-60 minutes until tender.
- Heat the shredded chicken and BBQ sauce in a skillet over medium heat.
- Slice the baked sweet potatoes open and fluff the insides with a fork.
- Season with salt and pepper.
