Description

A comforting bowl filled with earthy sweet potatoes, smoky BBQ chicken, and vibrant toppings, perfect for cozy dinners or meal prep.


Ingredients

  • 2 medium sweet potatoes
  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 1 cup black beans
  • 1 cup corn, canned or frozen
  • 1 avocado, sliced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the sweet potatoes by washing and piercing them with a fork.
  3. Bake the sweet potatoes for 45-60 minutes until tender.
  4. Heat the shredded chicken and BBQ sauce in a skillet over medium heat.
  5. Slice the baked sweet potatoes open and fluff the insides with a fork.
  6. Season with salt and pepper.
  7. Assemble the bowls with BBQ chicken, black beans, corn, avocado, red onion, and cilantro on top.
  8. Serve immediately or prepare in advance for meal prep.

Notes
