- 1 lb ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 4 large flour tortillas
- Oil for frying
Instructions
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
- Stir in chili powder, cumin, salt, and pepper. Cook for another 2 minutes.
- Remove from heat and mix in the shredded cheese until melted.
- Place a portion of the beef and cheese mixture in the center of each tortilla.
- Fold the sides of the tortilla over the filling and roll it up tightly.
- Heat oil in a deep pan over medium-high heat.
- Fry the chimichangas until golden brown and crispy, about 3-4 minutes on each side.
- Remove from oil and drain on paper towels.
- Serve hot with salsa or guacamole.
Notes
- For a healthier option, you can bake the chimichangas instead of frying them.
- Feel free to add beans or vegetables to the filling for extra flavor.
- These chimichangas can be frozen before frying for a quick meal later.
