Ingredients

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Oil for frying

Instructions

  1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  3. Stir in chili powder, cumin, salt, and pepper. Cook for another 2 minutes.
  4. Remove from heat and mix in the shredded cheese until melted.
  5. Place a portion of the beef and cheese mixture in the center of each tortilla.
  6. Fold the sides of the tortilla over the filling and roll it up tightly.
  7. Heat oil in a deep pan over medium-high heat.
  8. Fry the chimichangas until golden brown and crispy, about 3-4 minutes on each side.
  9. Remove from oil and drain on paper towels.
  10. Serve hot with salsa or guacamole.
