Succulent beef sliders with a zesty horseradish spread, perfect for any occasion.
Ingredients

- 2 lbs beef chuck roast
- 1 tbsp avocado oil
- Sea salt
- 1 large sweet onion (sliced)
- 6 medium garlic cloves (finely sliced)
- 2 tsp sea salt
- Ground black pepper (to taste)
- 2 tsp chipotle chili powder
- 2 tsp smoked paprika
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp dried garlic
- 1 tsp dried onion
- 1 tsp sugar
- 2 bay leaves
- 2 cups water
- 1/2 cup mayonnaise
- 3 tbsp horseradish
- 1/2 tsp dried garlic
- 1/2 tsp smoked paprika
- Ground black pepper
- 1/2 tsp sea salt
- 2 tbsp fresh chopped chives
- 2 tbsp fresh chopped parsley
- 10 small dinner rolls
- 5 slices Havarti cheese (cut in half; can also use mozzarella or provolone)
Instructions
- Sear the beef: Heat avocado oil in a skillet over medium heat. Season the beef chuck roast with sea salt and ground black pepper. Sear it in the skillet for about 4-5 minutes on each side until it turns a golden brown.
- Combine ingredients: Transfer the seared beef to a slow cooker. Add sliced onions, garlic, chipotle chili powder, smoked paprika, ground coriander, cumin, dried garlic, dried onion, sugar, bay leaves, and water. Stir to combine.
- Cook: Cover and cook on low for 480 minutes, allowing time for the beef to become tender and soak up all the flavors.
- Mix ingredients for the horseradish spread: In a mixing bowl, combine mayonnaise, horseradish, dried garlic, smoked paprika, ground black pepper, sea salt, chopped chives, and parsley. Stir all ingredients until smooth.
- Taste & adjust the spread; add more horseradish if desired. Cover and refrigerate until ready to use.
- Shred the beef: After cooking, remove the beef from the slow cooker and shred it using two forks, blending it with the juices.
- Prep the rolls: Toast the small dinner rolls in the skillet for a delightful crunch.
- Assemble: On each toasted roll, pile on shredded beef and top with half a slice of cheese. Pop them under the broiler for a minute or two to melt the cheese.
- Spread a generous amount of horseradish spread on the tops of the rolls. Place them back together, and serve warm.
