- 1 large head of romaine or butter lettuce
- ½ small head red cabbage
- ½ small head Napa cabbage
- 2 to 3 large carrots, grated
- 3 green onions, chopped
- ¼ cup freshly chopped cilantro
- 1 cup cooked edamame beans
- 1 cup canned mandarins, drained
- ¼ cup sliced almonds
- 1 cup wonton crisps
- ¼ cup soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame seed oil
- 1 to 2 tbsp honey
- 1 tbsp sesame seeds
- 1 pressed garlic clove
- 1 tsp grated or pureed ginger
- 4 large boneless, skinless chicken breasts
- 1 tbsp cooking oil
- ¼ cup soy sauce (for chicken)
- ¼ cup water (for chicken)
- ¼ cup brown sugar
- 1 tbsp sesame seed oil (for chicken)
- 1 tbsp rice vinegar (for chicken)
- 5 to 6 garlic cloves (finely minced)
- 1 tbsp ginger (pureed)
- 1½ tbsp cornstarch (or 1 tbsp arrowroot powder)
- 2 tbsp water (for chicken)
- Sesame seeds (for garnish)
Instructions
- Marinate the Chicken: Mix soy sauce, water, brown sugar, sesame oil, rice vinegar, minced garlic, and ginger in a bowl. Place chicken in a resealable bag and marinate for at least 30 minutes.
- Cook the Chicken: Heat cooking oil in a skillet over medium heat. Remove chicken from marinade, discard excess and sear for 6-7 minutes each side until cooked through. Let rest before slicing.
- Chop the Veggies: In a large mixing bowl, finely chop romaine, red cabbage, and Napa cabbage. Grate carrots, and add green onions, cilantro, and edamame.
- Add Sweet Mandarins: Gently fold in mandarin segments.
- Mix the Dressing: Whisk together soy sauce, rice vinegar, sesame oil, honey, pressed garlic, ginger, and sesame seeds until smooth.
- Combine It All: Pour dressing over salad ingredients and toss gently. Slice cooked chicken and lay on top of the salad.
- Finish with Crunch: Sprinkle with sliced almonds and wonton crisps, and garnish with sesame seeds if desired. Serve immediately.
Notes
For the best flavor, marinate chicken longer and keep salad ingredients and dressing separate until serving to maintain freshness.
