Description

A delicious and refreshing shrimp roll recipe perfect for summer picnics and gatherings, featuring juicy shrimp and a creamy dressing.


Ingredients

  • 1 1/2 lbs jumbo shrimp
  • 6 brioche buns
  • 2 tbsp butter (for toasting bread)
  • 2 large lemons (for serving)
  • 3 sticks celery
  • 2 green onions
  • 2 tbsp fresh chopped parsley
  • 2 tbsp fresh chopped chives
  • 2 tbsp fresh chopped dill
  • 2 tbsp capers
  • Zest from 1 lemon
  • 2 to 3 tbsp fresh lemon juice
  • 3 large garlic cloves
  • 1 tbsp red wine vinegar
  • 1 1/2 tbsp Dijon mustard
  • 1/2 cup mayonnaise
  • 1 1/2 tsp sea salt
  • 1 tsp dried onion powder
  • 1 tsp paprika
  • Ground black pepper

Instructions

  1. Combine mayonnaise, Dijon mustard, red wine vinegar, lemon juice, lemon zest, garlic, and salt and pepper in a medium bowl.
  2. Bring a large pot of salted water to a rolling boil and cook the shrimp for 2-3 minutes.
  3. Drain the shrimp and plunge into ice water to stop the cooking.
  4. Chop the shrimp into bite-sized pieces and add to a large mixing bowl.
  5. Add chopped celery, green onions, fresh herbs, and capers to the shrimp.
  6. Fold the dressing into the shrimp mixture.
  7. Melt butter in a skillet and toast each brioche bun until golden brown.
  8. Spoon the shrimp filling into each toasted bun and squeeze fresh lemon over the top before serving.

Notes

Make the dressing and chop vegetables ahead of time for convenience. Store separately in the refrigerator if necessary.
