Description

Deliciously creamy cheesecake bars infused with Biscoff cookie butter, topped with a crunchy Biscoff cookie crust.


Ingredients

Scale
  • 1 1/2 cups Biscoff cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup Biscoff cookie butter
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix crushed Biscoff cookies with melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking pan to form the crust.
  4. In a large mixing bowl, beat the cream cheese until smooth.
  5. Add Biscoff cookie butter, sugar, eggs, vanilla extract, and flour; mix until well combined.
  6. Pour the cheesecake mixture over the crust in the baking pan.
  7. Bake for 25-30 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours before slicing into bars.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • These bars can be topped with whipped cream and additional Biscoff cookie crumbs.
  • Store leftovers in an airtight container in the refrigerator.
