Description
Deliciously creamy cheesecake bars infused with Biscoff cookie butter, topped with a crunchy Biscoff cookie crust.

- 1 1/2 cups Biscoff cookies, crushed
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup Biscoff cookie butter
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix crushed Biscoff cookies with melted butter until combined.
- Press the mixture into the bottom of a greased 9×9 inch baking pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add Biscoff cookie butter, sugar, eggs, vanilla extract, and flour; mix until well combined.
- Pour the cheesecake mixture over the crust in the baking pan.
- Bake for 25-30 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before slicing into bars.
Notes
- For a richer flavor, use full-fat cream cheese.
- These bars can be topped with whipped cream and additional Biscoff cookie crumbs.
- Store leftovers in an airtight container in the refrigerator.
