Description

A classic layered chocolate cake filled with sweet cherry pie filling and whipped cream, perfect for celebrations.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 can (14 ounces) cherry pie filling
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • Dark chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry mixture. Beat on medium speed for 2 minutes, then stir in boiling water.
  4. Pour the batter into prepared pans, filling them about two-thirds full.
  5. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then remove them to wire racks to cool completely.
  7. Slice each cake in half horizontally for four layers.
  8. On a serving platter, place one layer, spread with cherry pie filling and followed by whipped cream.
  9. Repeat with the next layers, stacking them carefully.
  10. Top with the last layer, spread remaining whipped cream on the cake.
  11. Garnish with dark chocolate shavings and refrigerate until serving.

Notes

You can bake the cake layers a day in advance. For a twist, add a splash of cherry liqueur to the layers.
