Description

Ingredients

  • 1 lb chicken breasts (or thighs), sliced against the grain into 1/4” (5-mm) thick pieces
  • 1 tablespoon light soy sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 tablespoon cornstarch
  • 1/2 cup chicken broth
  • 2 tablespoons light soy sauce
  • 2 tablespoons Shaoxing wine
  • 2 teaspoons dark soy sauce
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons sugar
  • 2 teaspoons coarsely ground black pepper
  • 1/8 teaspoon salt
  • 2 tablespoons peanut oil (or vegetable oil)
  • 1 tablespoon minced ginger
  • 2 cloves garlic, minced
  • 1/2 white onion, chopped
  • 2 bell peppers, chopped (mixed colors)

Instructions

  1. Marinate the Chicken: Combine chicken, light soy sauce, Shaoxing wine, and cornstarch in a bowl. Mix gently and let it marinate for 10-15 minutes.
  2. Prepare the Sauce: Whisk together chicken broth, light soy sauce, Shaoxing wine, dark soy sauce, cornstarch, sugar, black pepper, and salt in a small bowl.
  3. Sear the Chicken: Heat 1 tablespoon of peanut oil in a skillet over medium-high heat. Add chicken and sear for about 1 minute until browned. Flip and cook for another 30 seconds. Set aside.
  4. Stir-Fry Aromatics: In the same skillet, add the remaining oil. Stir-fry ginger and garlic until fragrant, then add onion and bell peppers. Cook for about 20 seconds.
  5. Combine and Thicken: Pour sauce mixture into the skillet, stirring until it thickens.
  6. Finish the Dish: Add cooked chicken back in and toss everything together. Transfer to a serving plate.
  7. Serve Hot: Enjoy immediately as a vibrant centerpiece for your meal.

Notes

For a healthier option, consider using an air fryer for the chicken. Customize the vegetables by adding nuts or using different pepper colors for visual appeal.
