- 1 large fennel bulb (very thinly sliced)
- 1 large green apple (cored and sliced)
- 1 large avocado (sliced)
- 3 small shallots (thinly sliced)
- 1/3 cup crumbled goat cheese
- 1/4 cup pistachios (chopped)
- 3 cups blackberries
- Zest from 1 lemon
- 1/3 cup lemon juice (freshly squeezed)
- 1/3 cup olive oil
- 1 tbsp Dijon mustard
- 2 tbsp maple syrup
- 3 garlic cloves (pressed or grated)
- Salt and pepper (to taste)
- 1 tbsp fresh thyme
- 1 tbsp poppy seeds
Instructions
- Whisk together the lemon juice, Dijon mustard, maple syrup, and olive oil in a small bowl. Add garlic, lemon zest, salt, and pepper; whisk until emulsified.
- Thinly slice the fennel and shallots; set aside.
- Core and slice the green apple into wedges.
- Assemble in a large bowl with spring greens, fennel, shallots, apple, and blackberries.
- Add sliced avocado, goat cheese, and pistachios on top.
- Drizzle dressing over the salad and gently toss before serving.
