Description

These delightful bars combine juicy blackberries and crunchy pistachios on a buttery crust, creating a perfect balance of sweet and tangy flavors.


Ingredients

  • 1 cup All-Purpose Flour (or gluten-free flour)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1/4 cup Granulated Sugar
  • 1/4 teaspoon Salt
  • 1 large Egg Yolk
  • 24 tablespoons Ice Water (use cold water)
  • 2 cups Fresh Blackberries (or raspberries/blueberries)
  • 1/2 cup Granulated Sugar (adjust as necessary)
  • 1 tablespoon Lemon Juice (fresh juice is best)
  • 2 tablespoons Cornstarch
  • 1/2 cup Light Brown Sugar (or granulated sugar)
  • 1 teaspoon Baking Powder
  • 1 cup Pistachios (shelled and unsalted)
  • 1/2 cup Unsalted Butter (cold and cubed, for topping)
  • 1 large Egg (for topping)
  • 1 teaspoon Vanilla Extract

Instructions

  1. Prepare the Crust: In a mixing bowl, combine flour, granulated sugar, and salt. Add the cold, cubed butter and mix until resembling coarse crumbs. Stir in the egg yolk and enough ice water until the dough comes together. Press the dough evenly into the bottom of your prepared 9×9-inch baking pan.
  2. Pre-Bake the Crust: Preheat your oven to 350°F (175°C). Place the crust in the oven and bake for about 15 minutes, or until lightly golden.
  3. Prepare the Filling: In a separate bowl, combine blackberries, granulated sugar, lemon juice and cornstarch. Gently mash the blackberries and stir.
  4. Make the Pistachio Topping: In another bowl, stir together brown sugar, flour, and baking powder. Add chopped pistachios and cold butter, mixing until crumbly. Incorporate the egg and vanilla.
  5. Assemble and Bake: Pour the blackberry filling over the pre-baked crust, spreading evenly. Crumble the pistachio topping over. Bake for an additional 25-30 minutes.
  6. Cool and Serve: Remove from the oven and let cool completely in the pan. Slice into squares and enjoy.

Notes

These bars store beautifully and can be made ahead of time. Consider customizing the filling with different berries or nuts.
