Ingredients

  • 1/2 cup Granulated Sugar (adjust as necessary)
  • 1 tablespoon Lemon Juice (fresh juice is best)
  • 2 tablespoons Cornstarch
  • 1/2 cup Light Brown Sugar (or granulated sugar)
  • 1 teaspoon Baking Powder
  • 1 cup Pistachios (shelled and unsalted)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Instructions

  1. Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, whisk together the flour, sugar, and salt. Add the cold cubed butter and blend until crumbly, resembling coarse meal. Gently fold in the egg yolk and gradual ice water until the dough forms a ball. Do not overmix!
  2. Press into the baking dish: Transfer your dough into the lined baking dish, pressing it down evenly along the bottom. Bake for about 15–20 minutes until slightly golden.
  3. Prepare the filling: While the crust bakes, combine the blackberries, sugar, lemon juice, and cornstarch in a separate saucepan over medium heat. Cook for about 5 minutes, stirring until the berries release their juices and the filling thickens slightly.
  4. Mix the nutty topping: In a clean bowl, mix together the brown sugar, pistachios, and baking powder. Pour in the cold cubed butter, egg, and vanilla extract, stirring until well combined.
  5. Layer and bake: Once the crust is golden and slightly cooled, spread the thickened blackberry mixture over the crust evenly. Spoon the pistachio topping over the blackberries.
  6. Final bake time: Slide the dish into the oven and bake for an additional 25-30 minutes, or until the top is golden and bubbly.
  7. Cool and cut: Allow the bars to cool completely in the dish before slicing into squares.

Notes

You can prepare the crust and filling a day in advance, keeping them covered in the fridge until ready to assemble. Feel free to swap berries or nuts based on your preference.
