- 1/2 cup Light Brown Sugar (or granulated sugar)
- 1 teaspoon Baking Powder
- 1 cup Pistachios (shelled and unsalted)
- 1/2 cup Unsalted Butter (cold and cubed)
- 1 large Egg
- 1 teaspoon Vanilla Extract
Instructions
- Prepare the Crust: In a mixing bowl, combine the flour, salt, sugar, and cold butter cubes. With a fork or pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs. Stir in the egg yolk, then add ice water until a dough forms. Be careful not to overwork it.
- Press the Dough: Transfer the dough into your prepared baking pan. Use your fingers to press it down evenly across the bottom. Prick the surface with a fork to prevent air bubbles. Refrigerate the crust.
- Make the Berry Mixture: Combine blackberries, granulated sugar, lemon juice, and cornstarch. Gently mix until the blackberries are coated.
- Prepare the Pistachio Filling: Cream the cold butter and brown sugar until light and fluffy. Add the egg and vanilla, mixing until well incorporated. Combine with pistachios, flour, and baking powder until just mixed.
- Layer the Bars: Preheat oven to 350°F (175°C). Spread the berry mixture evenly over the chilled crust, then dollop the pistachio filling over it.
- Bake to Perfection: Bake for 30-35 minutes, or until golden brown and the filling sets. Let cool completely before slicing.
