Description

Indulge in these delightful Blackberry Pistachio Dream Bars that combine sweet blackberries with a creamy pistachio filling over a buttery crust, making for a delicious treat perfect for any occasion.

Ingredients

Scale
  • 1 cup All-Purpose Flour (or gluten-free flour)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1/4 cup Granulated Sugar
  • 1/4 teaspoon Salt
  • 1 large Egg Yolk
  • 24 tablespoons Ice Water (use cold water)
  • 2 cups Fresh Blackberries (or raspberries/blueberries)
  • 1/2 cup Granulated Sugar (adjust as necessary)
  • 1 tablespoon Lemon Juice (fresh juice is best)
  • 2 tablespoons Cornstarch
  • 1/2 cup Light Brown Sugar (or granulated sugar)
  • 1 teaspoon Baking Powder
  • 1 cup Pistachios (shelled and unsalted)
  • 1/2 cup Unsalted Butter (cold and cubed)
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Instructions

  1. Prepare the Crust: In a mixing bowl, combine the flour, salt, sugar, and cold butter cubes. With a fork or pastry cutter, work the butter into the flour until the mixture resembles coarse crumbs. Stir in the egg yolk, then add ice water until a dough forms. Be careful not to overwork it.
  2. Press the Dough: Transfer the dough into your prepared baking pan. Use your fingers to press it down evenly across the bottom. Prick the surface with a fork to prevent air bubbles. Refrigerate the crust.
  3. Make the Berry Mixture: Combine blackberries, granulated sugar, lemon juice, and cornstarch. Gently mix until the blackberries are coated.
  4. Prepare the Pistachio Filling: Cream the cold butter and brown sugar until light and fluffy. Add the egg and vanilla, mixing until well incorporated. Combine with pistachios, flour, and baking powder until just mixed.
  5. Layer the Bars: Preheat oven to 350°F (175°C). Spread the berry mixture evenly over the chilled crust, then dollop the pistachio filling over it.
  6. Bake to Perfection: Bake for 30-35 minutes, or until golden brown and the filling sets. Let cool completely before slicing.

Notes

Make-ahead by preparing crust and berry mixture a day in advance. Can be frozen for up to three months.
