Ingredients

  • 2 cups rolled oats
  • 1 cup milk (or non-dairy alternative)
  • 2 ripe bananas, mashed
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, mix the mashed bananas, milk, honey (or maple syrup), and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Divide the mixture evenly among the muffin tin cups.
  7. Bake for 20-25 minutes or until the tops are golden and a toothpick comes out clean.
  8. Let cool for a few minutes before removing from the tin.
