Ingredients

- 2 cups rolled oats
- 1 cup milk (or non-dairy alternative)
- 2 ripe bananas, mashed
- 1 cup blueberries (fresh or frozen)
- 1/4 cup honey or maple syrup
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, mix the mashed bananas, milk, honey (or maple syrup), and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Divide the mixture evenly among the muffin tin cups.
- Bake for 20-25 minutes or until the tops are golden and a toothpick comes out clean.
- Let cool for a few minutes before removing from the tin.
Notes
- These oatmeal cups can be stored in the refrigerator for up to a week.
- They can also be frozen for longer storage; just reheat in the microwave when ready to eat.
- Feel free to substitute other fruits or nuts as desired.
