Description
An indulgent breakfast of thick brioche stuffed with creamy cheese and crispy bacon, drizzled with bourbon-infused maple syrup.

- 8 slices brioche or challah bread, cut thick
- 6 slices thick-cut bacon
- 4 large eggs
- 1/2 cup whole milk
- 1 tablespoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- 2 ounces cream cheese, softened
- 1 cup pure maple syrup
- 2 tablespoons bourbon
- 1 teaspoon vanilla extract
- Pinch fine salt
Instructions
- Preheat the oven to 400°F (200°C) and line a baking tray with a wire rack. Arrange the bacon slices in a single layer on top and bake for about 15 minutes.
- Transfer the bacon to paper towels to absorb excess grease and chop finely.
- In a shallow bowl, whisk together the eggs, whole milk, vanilla extract, and ground cinnamon until smooth.
- Mix the chopped bacon with the cream cheese in a small bowl.
- Create a pocket in each thick slice of bread and fill it with the bacon and cream cheese mixture.
- Dip each stuffed slice into the custard mixture, coating evenly.
- Melt the butter in a non-stick skillet over medium heat and cook the stuffed bread slices for 3 to 4 minutes on each side.
- In a small saucepan, heat the maple syrup, bourbon, vanilla extract, and a pinch of salt over low heat for about 2 minutes until warm.
- Serve the cooked toast on plates and drizzle generously with the warm maple bourbon glaze.
Notes
For a spicier kick, consider adding diced jalapeños in the cream cheese filling.
