Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
  • 1 can (20 oz) pineapple chunks with juice (do not drain)
  • ½ cup brown sugar (light or dark)
  • ⅓ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp ground ginger (or 1 tbsp fresh grated)
  • 1 tbsp cornstarch
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for heat)
  • Chopped green onions (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Toss chicken chunks with salt, pepper, and garlic powder in a large bowl.
  3. Heat olive oil in a skillet over medium-high heat and brown the chicken for about 4 minutes.
  4. Whisk together the brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch until smooth.
  5. Mix the browned chicken and pineapple chunks in your baking dish and pour the glaze over them.
  6. Cover with foil and bake for 25–30 minutes and then uncover for the last 5–10 minutes to caramelize the sauce.
  7. Let rest for 5 minutes before serving and garnish with chopped green onions.

Notes

For a healthier option, consider using chicken thighs, or substitute pineapple with sweet mango or peaches when in season. Prep the chicken and marinade a day in advance for enhanced flavor.
