Ingredients

  • 1 tablespoon Cajun seasoning
  • 4 large flour tortillas

  • 1/4 cup sour cream

Instructions

  1. In a large bowl, combine shredded chicken, black beans, rice, corn, cheese, and Cajun seasoning.
  2. Warm the tortillas in a skillet or microwave until pliable.
  3. Spoon the chicken mixture onto each tortilla.
  4. Drizzle with salsa and add a dollop of sour cream.
  5. Roll the tortillas tightly to form burritos.
  6. Place the burritos seam-side down in a baking dish.
