- 1 can black beans, drained and rinsed
- 1 cup cooked rice
- 1 cup corn
- 1 cup shredded cheese
- 1 tablespoon Cajun seasoning
- 4 large flour tortillas
- 1/2 cup salsa
- 1/4 cup sour cream
Instructions
- In a large bowl, combine shredded chicken, black beans, rice, corn, cheese, and Cajun seasoning.
- Warm the tortillas in a skillet or microwave until pliable.
- Spoon the chicken mixture onto each tortilla.
- Drizzle with salsa and add a dollop of sour cream.
- Roll the tortillas tightly to form burritos.
- Place the burritos seam-side down in a baking dish.
- Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until heated through.

- Feel free to add more vegetables like bell peppers or onions.
