Description

A one-pot dish featuring creamy Alfredo sauce with Cajun spices, tender chicken, and orzo pasta, perfect for busy weeknights.


Ingredients

  • 1 lb boneless skinless chicken breasts (diced)
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tbsp olive oil (for sautéing)
  • 1 cup diced onions
  • 2 cloves garlic (minced)
  • 1 cup bell pepper (diced, optional)
  • 1.5 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (grated)
  • Salt (to taste)
  • Pepper (to taste)
  • Fresh parsley (for garnish, optional)

Instructions

  1. In a large pot, warm 1 tablespoon of olive oil over medium heat. Add diced chicken and season with Cajun seasoning, salt, and pepper. Sauté until golden brown and cooked through, about 5-7 minutes.
  2. Remove the chicken and set it aside. In the same pot, add diced onions and minced garlic, and sauté for 2-3 minutes until fragrant.
  3. If using, stir in diced bell pepper and cook for another minute.
  4. Mix in orzo pasta, chicken broth, and heavy cream. Bring to a gentle boil.
  5. Once boiling, reduce heat to low, cover, and let it simmer for about 10-12 minutes, stirring occasionally.
  6. Fold in the cooked chicken and grated Parmesan cheese, stirring until creamy.
  7. Ladle into bowls and garnish with fresh parsley if desired.

Notes

For meal prep, store leftovers in an airtight container in the fridge for up to 3 days. This dish can also be frozen for up to 3 months. Reheat with a splash of broth or cream for extra creaminess.
