- 1 lb boneless skinless chicken breasts (diced)
- 1 tbsp Cajun seasoning (adjust to taste)
- 1 tbsp olive oil (for sautéing)
- 1 cup diced onions
- 2 cloves garlic (minced)
- 1 cup bell pepper (diced, optional)
- 1.5 cups orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup Parmesan cheese (grated)
- Salt (to taste)
- Pepper (to taste)
- Fresh parsley (for garnish, optional)
Instructions
- Warm olive oil in a large pot over medium heat.
- Sauté the diced chicken, seasoned with Cajun seasoning, for about 5-7 minutes until golden brown. Remove and set aside.
- Cook the diced onions and minced garlic in the same pot for 2-3 minutes until fragrant. Optionally, add bell peppers and cook for an extra minute.
- Add the orzo pasta, chicken broth, and heavy cream. Stir gently and bring to a gentle boil.
- Simmer covered for 10-12 minutes until the orzo is tender and absorbs the broth.
- Finish by returning the chicken to the pot and adding Parmesan cheese. Stir until creamy and well combined.
- Serve warm, garnished with fresh parsley if desired.
