Description

A creamy and flavorful one-pot dish melding Cajun spices with Alfredo sauce and tender orzo.


Ingredients

  • 1 lb boneless skinless chicken breasts (diced)
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1 tbsp olive oil (for sautéing)
  • 1 cup diced onions
  • 2 cloves garlic (minced)
  • 1 cup bell pepper (diced, optional)
  • 1.5 cups orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese (grated)
  • Salt (to taste)
  • Pepper (to taste)
  • Fresh parsley (for garnish, optional)

Instructions

  1. Warm olive oil in a large pot over medium heat.
  2. Sauté the diced chicken, seasoned with Cajun seasoning, for about 5-7 minutes until golden brown. Remove and set aside.
  3. Cook the diced onions and minced garlic in the same pot for 2-3 minutes until fragrant. Optionally, add bell peppers and cook for an extra minute.
  4. Add the orzo pasta, chicken broth, and heavy cream. Stir gently and bring to a gentle boil.
  5. Simmer covered for 10-12 minutes until the orzo is tender and absorbs the broth.
  6. Finish by returning the chicken to the pot and adding Parmesan cheese. Stir until creamy and well combined.
  7. Serve warm, garnished with fresh parsley if desired.
