Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil (for chicken)
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 bell peppers (red, green, or yellow), sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil (for sautéing)
  • Fresh parsley or cilantro, chopped (optional)

Instructions

  1. In a small bowl, combine Cajun seasoning, garlic powder, onion powder, paprika, thyme, salt, and pepper. Rub this blend evenly over the chicken breasts.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side until golden-brown and cooked through. Remove and let rest.
  3. In the same skillet, add 1 tablespoon of olive oil if needed. Sauté sliced bell peppers and onions for about 5-6 minutes until they soften, then add minced garlic and cook for another 1-2 minutes.
  4. Slice the rested chicken and return it to the skillet with the veggies. Toss everything together for an additional 2-3 minutes.
  5. Garnish with chopped parsley or cilantro and serve hot.

Notes

Marinate chicken overnight for deeper flavor. Use fresh ingredients for the best taste.
