- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil (for chicken)
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 bell peppers (red, green, or yellow), sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil (for sautéing)
- Fresh parsley or cilantro, chopped (optional)
Instructions
- In a small bowl, combine Cajun seasoning, garlic powder, onion powder, paprika, thyme, salt, and pepper. Rub this blend evenly over the chicken breasts.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-7 minutes per side until golden-brown and cooked through. Remove and let rest.
- In the same skillet, add 1 tablespoon of olive oil if needed. Sauté sliced bell peppers and onions for about 5-6 minutes until they soften, then add minced garlic and cook for another 1-2 minutes.
- Slice the rested chicken and return it to the skillet with the veggies. Toss everything together for an additional 2-3 minutes.
- Garnish with chopped parsley or cilantro and serve hot.
