Ingredients

  • 8 oz (225g) pasta (penne, fettuccine, or your choice)
  • 1 tbsp olive oil
  • 12 oz (340g) smoked sausage (andouille or kielbasa), sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), sliced
  • 1 ½ cups heavy cream
  • 1 cup chicken broth
  • 1 tbsp Cajun seasoning
  • ½ cup grated Parmesan cheese
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add your favorite pasta and cook according to package instructions until al dente.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced sausage and allow it to brown, about 3-5 minutes.
  3. Remove the sausage from the skillet and set aside.
  4. Add the diced onion and sliced bell pepper to the skillet, sautéing for 2-3 minutes until softened.
  5. Incorporate the minced garlic and cook for another 30 seconds until fragrant.
  6. Pour in the chicken broth and heavy cream, stirring well. Sprinkle in the Cajun seasoning, red pepper flakes (if using), salt, and black pepper.
  7. Bring everything to a gentle simmer, letting the flavors meld beautifully.
  8. Add the cooked sausage and pasta to the skillet, stirring well to coat everything in the creamy sauce. Simmer for another 2-3 minutes.
  9. Sprinkle in the grated Parmesan cheese, stirring until melted.
  10. Garnish with fresh parsley and serve hot.

Notes

For a vegetarian option, swap sausage for plant-based varieties. Adjust spice levels with Cajun seasoning as per your preference.
