- 1 lb shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 cup cooked rice
- 1 cup bell peppers, sliced
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, toss the shrimp with Cajun seasoning until well coated.
- Heat olive oil in a skillet over medium heat and add the seasoned shrimp.
- Cook the shrimp for 2-3 minutes on each side until they are pink and cooked through.
- Remove the shrimp from the skillet and set aside.
- In the same skillet, add bell peppers and sauté until tender.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Add lemon juice and season with salt and pepper.
- Return the shrimp to the skillet and mix well.
- Serve the shrimp mixture over cooked rice.
