Ingredients

Instructions

  1. Slice the eggplants into rounds or cubes, ensuring even sizes for cooking.
  2. Heat olive oil in a frying pan over medium heat and add the eggplant in a single layer.
  3. Cook until golden and tender for 7–10 minutes, stirring occasionally.
  4. Add garlic and sauté for another minute until fragrant.
  5. Mix the soy sauce and honey (or sugar) in a small bowl, then pour over the eggplant.
  6. Stir gently to coat and cook for an additional 2–3 minutes.
  7. Season with salt and pepper to taste and garnish with green onions.
  8. Serve immediately over warm rice.

Notes

For a lighter version, roast the eggplant in the oven or use an air fryer. You can substitute soy sauce with tamari for gluten-free or honey with maple syrup for a vegan option.
