- 2 tablespoons olive oil for sautéing
- 1 large yellow onion, thinly sliced
- 3 cloves garlic, minced
- Salt and pepper to taste
- 3 tablespoons extra virgin olive oil for chili oil
- 1 tablespoon red chili flakes
- 1 teaspoon paprika
- 1 small garlic clove, thinly sliced for chili oil
- 1 teaspoon soy sauce
- Grated Parmesan cheese
- Fresh basil or parsley, chopped
- Extra chili flakes (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onion, stirring to coat. Sauté the onions for about 20-25 minutes until caramel brown and sweet.
- In a small saucepan, combine the chili oil ingredients: 3 tablespoons of olive oil, red chili flakes, paprika, and sliced garlic. Heat over medium-low until the garlic is golden and fragrant. Stir in the soy sauce and set aside.
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve a cup of pasta water before draining.
- Add the drained pasta to the skillet with the caramelized onions, stirring to combine. Use reserved pasta water to create a sauce. Drizzle and toss with chili oil.
- Serve warm, garnished with grated Parmesan and fresh herbs, adding extra chili flakes if desired.
Notes
You can caramelize onions ahead of time and store them in the refrigerator. This pasta is versatile, allowing for the addition of vegetables or protein.
