Ingredients

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14 oz) coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a large pan over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in the bell pepper and cook for another 2 minutes.
  4. Add the sliced plantains and cook for 5 minutes, stirring occasionally.
  5. Pour in the coconut milk, curry powder, turmeric, salt, and pepper.
  6. Bring to a simmer and cook for 15-20 minutes until the plantains are tender.
  7. Garnish with fresh cilantro before serving.
