- 2 ripe plantains, sliced
- 1 tablespoon coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14 oz) coconut milk
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat coconut oil in a large pan over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Stir in the bell pepper and cook for another 2 minutes.
- Add the sliced plantains and cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk, curry powder, turmeric, salt, and pepper.
- Bring to a simmer and cook for 15-20 minutes until the plantains are tender.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier version, add chopped chili peppers.
- Serve with rice or quinoa for a complete meal.
