- 1 lb flank steak
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup chopped cilantro
- For the cilantro lime sauce:
- 1/2 cup Greek yogurt
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- 1 clove garlic, minced
- Salt to taste
Instructions
- Marinate the flank steak with olive oil, cumin, chili powder, salt, and pepper for at least 30 minutes.
- Grill the steak over medium-high heat for about 6-8 minutes on each side, or until desired doneness.
- Let the steak rest for 5 minutes before slicing it thinly against the grain.
- In a bowl, combine the cooked rice, black beans, corn, avocado, cherry tomatoes, and cilantro.
- In a separate bowl, mix together the Greek yogurt, cilantro, lime juice, garlic, and salt to create the cilantro lime sauce.
- Assemble the bowl by placing the rice mixture at the bottom, topped with sliced steak and drizzled with cilantro lime sauce.
- Serve immediately and enjoy!

- For a spicier kick, add jalapeños to the bowl.
