Ingredients

  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped cilantro
  • For the cilantro lime sauce:
  • 1/2 cup Greek yogurt
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 1 clove garlic, minced
  • Salt to taste

Instructions

  1. Marinate the flank steak with olive oil, cumin, chili powder, salt, and pepper for at least 30 minutes.
  2. Grill the steak over medium-high heat for about 6-8 minutes on each side, or until desired doneness.
  3. Let the steak rest for 5 minutes before slicing it thinly against the grain.
  4. In a bowl, combine the cooked rice, black beans, corn, avocado, cherry tomatoes, and cilantro.
  5. In a separate bowl, mix together the Greek yogurt, cilantro, lime juice, garlic, and salt to create the cilantro lime sauce.
