Instructions
- In a skillet, heat olive oil over medium heat and add diced potatoes. Cook until golden and tender.
- Add ground beef to the skillet and cook until browned. Stir in taco seasoning, salt, and pepper.
- Lay a tortilla flat and add a portion of the beef mixture and shredded cheese in the center.
- Fold the sides of the tortilla over the filling and roll it up tightly to form a wrap.
- In the same skillet, place the wrap seam-side down and cook until golden brown and crispy on both sides.
- Remove from heat, slice in half, and serve warm.
