Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (10 oz) enchilada sauce
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 small flour tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper.
  3. In a baking dish, layer 4 tortillas on the bottom.
  4. Spread half of the chicken mixture over the tortillas.
  5. Sprinkle 1 cup of cheese over the chicken mixture.
  6. Layer the remaining tortillas on top, followed by the rest of the chicken mixture.
  7. Top with the remaining cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

  • Feel free to add your favorite vegetables to the filling.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
