Description

Delicious, satisfying quesadillas filled with tender chicken, melted cheese, and hot honey, served with a zesty jalapeño cream sauce.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup hot honey
  • 8 flour tortillas
  • 1/2 cup sour cream
  • 1 jalapeño, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Cooking oil for frying

Instructions

  1. Toss the shredded chicken with hot honey, adding salt and pepper to taste.
  2. Warm your skillet over medium heat and add a splash of cooking oil.
  3. Place one tortilla in the skillet and sprinkle half with shredded cheese, then add a portion of the hot honey chicken mixture on top and fold the tortilla in half.
  4. Cook the quesadilla for 2-3 minutes until golden brown, then flip and cook the other side.
  5. Mix sour cream, minced jalapeño, lime juice, and a pinch of salt for the spicy sauce.
  6. Serve the warm quesadillas with the spicy jalapeño cream sauce on the side.

Notes

Make the chicken mixture a day ahead for deeper flavor. Use room-temperature tortillas for best results.
