Delicious, satisfying quesadillas filled with tender chicken, melted cheese, and hot honey, served with a zesty jalapeño cream sauce.

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup hot honey
- 8 flour tortillas
- 1/2 cup sour cream
- 1 jalapeño, minced
- 1 tablespoon lime juice
- Salt and pepper to taste
- Cooking oil for frying
Instructions
- Toss the shredded chicken with hot honey, adding salt and pepper to taste.
- Warm your skillet over medium heat and add a splash of cooking oil.
- Place one tortilla in the skillet and sprinkle half with shredded cheese, then add a portion of the hot honey chicken mixture on top and fold the tortilla in half.
- Cook the quesadilla for 2-3 minutes until golden brown, then flip and cook the other side.
- Mix sour cream, minced jalapeño, lime juice, and a pinch of salt for the spicy sauce.
- Serve the warm quesadillas with the spicy jalapeño cream sauce on the side.
Notes
Make the chicken mixture a day ahead for deeper flavor. Use room-temperature tortillas for best results.
