A delicious and easy-to-make cheesy zucchini casserole that is perfect for a family meal or a potluck.
Ingredients

- 4 medium zucchinis, sliced
- 1 cup shredded cheddar cheese
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the sliced zucchinis, beaten eggs, milk, garlic powder, onion powder, salt, and pepper.
- Stir in the cheddar cheese and half of the Parmesan cheese.
- Transfer the mixture to a greased baking dish.
- Top with breadcrumbs and the remaining Parmesan cheese.
- Bake for 30-35 minutes or until the top is golden brown and the zucchini is tender.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add red pepper flakes.
- Can be made ahead of time and stored in the refrigerator before baking.
- Feel free to add other vegetables like bell peppers or mushrooms.
