Ingredients

  • 4 medium zucchinis, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced zucchinis, beaten eggs, milk, garlic powder, onion powder, salt, and pepper.
  3. Stir in the cheddar cheese and half of the Parmesan cheese.
  4. Transfer the mixture to a greased baking dish.
  5. Top with breadcrumbs and the remaining Parmesan cheese.
  6. Bake for 30-35 minutes or until the top is golden brown and the zucchini is tender.
  7. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Can be made ahead of time and stored in the refrigerator before baking.
