Description

A decadent dessert that layers creamy mascarpone, sweet cherries, and bold Amaretto for a vibrant and indulgent treat.


Ingredients

  • 12 oz pitted sweet cherries (fresh or frozen)
  • 1/4 cup granulated sugar
  • 2 tbsp Amaretto liqueur
  • 1 tbsp cornstarch
  • 2 tbsp cold water
  • 1 tsp fresh lemon juice
  • 4 large egg yolks (at room temperature)
  • 1/2 cup granulated sugar
  • 16 oz mascarpone cheese (cold)
  • 1 1/2 cups heavy whipping cream (cold)
  • 2 tbsp Amaretto liqueur
  • 1 tsp vanilla extract
  • 1 1/2 cups strong brewed coffee (cooled)
  • 1/4 cup Amaretto liqueur
  • 2430 ladyfingers (Savoiardi)
  • 2 tbsp unsweetened cocoa powder (for dusting)
  • Fresh cherries or chocolate shavings (for garnish, optional)

Instructions

  1. Make the Cherry Compote: In a medium saucepan, combine the pitted cherries and granulated sugar over medium heat. Stir occasionally until the sugar dissolves and the cherries release their juices (about 5-7 minutes). Mix cornstarch with cold water in a small bowl until smooth, then add it to the saucepan along with lemon juice, stirring constantly until thickened, about 2 minutes. Remove from heat and stir in Amaretto. Let cool.
  2. Prepare the Mascarpone Cream: In a large mixing bowl, whip the heavy cream until stiff peaks form. In another bowl, whisk together egg yolks and granulated sugar until pale, about 5 minutes. Gently fold mascarpone cheese into egg mixture. Gradually add whipped cream, incorporating vanilla extract and 2 tbsp of Amaretto until combined.
  3. Assemble the Tiramisu: Combine cooled coffee and 1/4 cup Amaretto in a shallow dish. Quickly dip each ladyfinger and arrange in a single layer. Spread half of the mascarpone cream over ladyfingers and drizzle half of the cherry compote over cream. Repeat layering with remaining ingredients.
  4. Chill and Serve: Cover and refrigerate for at least 4 hours, preferably overnight. Before serving, dust the top with cocoa powder and garnish as desired.

Notes

This dessert is best made a day in advance for optimal flavor development.
