- 1 cup fresh cherries, pitted and halved
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix together the milk, melted butter, egg, and vanilla extract. Whisk until well blended.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Carefully fold in the cherry halves without mashing them.
- Fill each muffin cup about two-thirds full with batter.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool slightly on a wire rack before indulging.
