Description

Delightfully fluffy muffins bursting with sweet and tart cherries, perfect for breakfast or a sweet snack.


Ingredients

  • 1 cup fresh cherries, pitted and halved
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together the milk, melted butter, egg, and vanilla extract. Whisk until well blended.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Carefully fold in the cherry halves without mashing them.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool slightly on a wire rack before indulging.

Notes

Muffins can be stored in an airtight container for up to 3-4 days. They also freeze well for up to 3 months.
