- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup cherry pie filling
- ½ cup chopped pistachios
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add the vanilla extract and eggs, one at a time, mixing well after each addition.
- Stir in the sour cream until fully incorporated.
- Pour half of the cheesecake batter over the crust.
- Spread the cherry pie filling over the batter, then pour the remaining cheesecake batter on top.
- Sprinkle chopped pistachios on top of the cheesecake.
- Bake for 50-60 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- For a firmer cheesecake, refrigerate overnight.
- Feel free to substitute fresh cherries for the pie filling if desired.
- Garnish with additional pistachios before serving for a decorative touch.
