Description

A delicious and creamy cherry pistachio cheesecake that combines the rich flavors of cream cheese, cherries, and pistachios for a delightful dessert experience.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup cherry pie filling
  • ½ cup chopped pistachios

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Stir in the sour cream until fully incorporated.
  6. Pour half of the cheesecake batter over the crust.
  7. Spread the cherry pie filling over the batter, then pour the remaining cheesecake batter on top.
  8. Sprinkle chopped pistachios on top of the cheesecake.
  9. Bake for 50-60 minutes or until the center is set.
  10. Allow to cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a firmer cheesecake, refrigerate overnight.
  • Feel free to substitute fresh cherries for the pie filling if desired.
  • Garnish with additional pistachios before serving for a decorative touch.
