Description

A delightful frozen dessert made with cherries and raspberries, perfect for warm weather.


Ingredients

  • 2 cups fresh cherries, pitted
  • 2 cups fresh raspberries
  • 1 cup heavy cream
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar

Instructions

  1. In a blender, puree the cherries and raspberries until smooth.
  2. In a mixing bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, combine the sweetened condensed milk, vanilla extract, and sugar.
  4. Gently fold the whipped cream into the condensed milk mixture.
  5. Fold in the berry puree until well combined.
  6. Pour the mixture into a loaf pan and smooth the top.
  7. Cover with plastic wrap and freeze for at least 6 hours or until firm.
  8. To serve, slice and enjoy the semifreddo straight from the freezer.

Notes

  • For a more intense flavor, add a splash of lemon juice to the berry puree.
